Italian gluten-free cooking class

Atherton's own Italian Educational Institute (Istituto Educazione Italiana) is offering to teach gluten-sensitive cooks the tricks of making "fabulous and easy Italian dishes that will leave you satisfied and not missing gluten," says chef Angelica Di Chiara-Fusco.
The first class is set for 2:30 to 6 p.m. Sunday, March 10. It will be held at Domenico Winery, 1697 Industrial Road in San Carlos. Taught by Ms. Di Chiara-Fusco, it will include recipes and hands-on instruction.
After the food is prepared, students will "enjoy the fruits of their labors together," Ms. Di Chiara-Fusco says.
A native of Italy, Ms. Di Chiara-Fusco says she became interested in gluten-free cooking when she was told her son was gluten-intolerant. In developing menus for the home table, she tapped into Italian cuisine, which is rich in gluten-free dishes, while expanding the repertoire by adapting some of the staples and ethnic foods of her adopted country, she says.
